Refrigerator Bran Muffins

Ingredients:

1/4 cup & 2 tbsp margarine or butter
2 eggs
1 1/2 cups sugar
2 cups All Bran Cereal
2 large Shredded Wheat cereal squares
2 cups buttermilk
2 1/2 tsp baking soda
2 1/2 cups flour
3/4 teaspoons salt
1/2 lb raisins (optional)

Directions:

Combine the Shredded Wheat squares with 1 cup boiling water. Set aside. Cream margarine and sugar. Add eggs and mix well. Add Shredded Wheat squares and buttermilk. Mix together dry ingredients and add to mix. Add raisins or other fruit or nuts as desired.

Bake at 400° for 20 minutes in greased muffin tin. Fill cups to 3/4.

Store in refigerator for 3 to 4 weeks.

 Helpful Hints & Tips:

This batch never lasts more than a week at my house so I make a double batch but use a BIG bowl! First batch is best if the mix has setup overnight.

You can add anything you like such as nuts or pineapple. For best results chop them up into small pieces. Yummy and good for you too! Don't eat too many in one day though -- the bran does work!
