Rosemary Chicken

Ingredients:

4 boneless skinless chicken breasts
6 large red potatoes
2 tablespoons olive oil
1 clove garlic
1 tablespoon rosemary

Directions:

Slice potatoes to desired size. Place potatoes in microwave safe container, cover with plastic wrap, vent corner. Microwave on high for 10 minutes or until potatoes are easily poked with a fork. In large skillet heat oil with minced garlic. Add sliced potatoes. Saute over medium heat for 10 minutes, stirring occasionally. Add more oil if necessary. Cut chicken in strips, add to potatoes. Add rosemary. Saute until chicken is fully cooked and potatoes are soft.

Helpful Hints & Tips:

Sprinkle chicken with garlic powder, paprika or pepper for more flavor and color
