Spinach-Pear (or whatever) Salad

Ingredients:

3 cups baby spinach, washed and dried (use package faster)
3 medium ripe pears, cut into slices
2 tablespoons crumbled blue cheese
 
Dressing:
2 tablespoons balsamic vinegar
3 tablespoons olive oil
3 tablespoons orange juice
salt to taste
1 clove crushed garlic
1/4 cup chopped walnuts or almonds

Directions:

1. In a salad bowl, place spinach, pears and cheese.
2. Whisk together dressing ingredients, except nuts, and toss with salad.
3. Toast nuts about 5 minutes in 325° oven. (I brown them in frying pan on the stove)
4. Sprinkle nuts over salad and serve.

Hints:

I am always asked for this recipe when I take it somewhere. I also change it from pears to canned Mandarine oranges, fresh oranges or sometimes tart apples. With the oranges (either) this makes a pretty holiday salad and is my favorite. Do not mix together if traveling.
